6.5L turbo diesel heating and cooling problem

temperature gauge spikes to red line after about 10-15 min after start up, blows cold air in the cab. only does it sometimes. low coolant light comes on sometimes, but coolant level seems ok. could it be the thermostat?

There are a few things it could be.  Take the thermostat out temporarily and run it, see if it overheats.  If it still does, then there is a circulation problem, like the water pump isn't pumping, or one of the lines somewhere is clogged.
